If you're creating new documents, Open Office.org is the way to go. Creates PDFs directly, you can import Word (and hundreds of other) documents... And it's free.

Oo! That one doesn't solve my many pdfs to a single multi-page pdf problem, but it certain keeps me from breaking down and buying overpriced M$Office! Awesome!
