Bananas

Help me, friendlist! You're my only hope!

I have a bunch of bananas, that, in the tradition of fruit in Alaska, went directly from BRIGHT GREEN to brown and mushy. They have not yet hit moldy.

I have most traditional baking supplies on hand - all the usual white powders, butter, oatmeal and an oven. I have no muffin pans, or any traditional cake pans, for that matter, but I do have a pie dish, a loaf pan and several casserole dishes.

What should I make?! The Internet stuns me into indecision with its options.

What are your favorite (preferably fast and easy) recipes?

Apis’ Banana Bread

Northamerican measurements, but I think it will be easy enough to figure out. Banana goodness!

Dry Ingredients:

1 3/4 cup flour
3/4 cup sugar
1/2 teaspoon baking soda
1 1/2 teaspoon baking powder
3/4 teaspoon salt
a little cinnamon powder

STIR Together

Add:

1 egg, beaten
3 bananas, mashed (Ripe, so they are sweeter)
A bit of vanilla extract
1/2 cup of milk (you can make it skim milk. )

Mix all together, pour into mold

Bake at 175 degrees Celsius (350 F) for 50 minutes. Remove and Let cool!

Bananna on toast! No, honestly... it's really yummy. Hot buttered toast, moosh a narna on there and sprinkle over some sugar or drizzle one some honey.

Further suggestions of banana bread! :D

I don't have the recipe handy though and my mom's already gone to bed. Good thing someone else has already shared a recipe.

Adding chocolate chips makes it even nummier!

(What else can you make with brown bananas? Banana bread muffins?)

In just about any baked item, you can substitute mashed bananas (or applesauce) for oil. I like using them in brownies just because they give a much more moist texture.

As someone else mentioned, the freezer is your friend if you're not ready to use them.

I'd probably make banana bread, but then again, I keep a stash of bananas in the freezer just for that purpose.

If you don't have all the supplies you need to make a certain recipe, I would suggest freezing the bananas. Once frozen, they will definitely become mooshy when unfrozen, but I hear it's still perfect for any type of muffin or bread type of recipe. =)

This was going to be my advice. :) In my experience, banana bread from frozen bananas is even tastier, because the bananas undergo some fermentation. :) So I would say freeze 'em until you get a bread loaf pan, and then make banana bread. (If I had my recipe handy, I'd post it...)

Make banana bread, let it get stale, then turn it into Banana Bread Pudding and serve it with caramel sauce and whipped cream.

What I do: I fry it along with eggs.

Along the same lines: underripe and overripe apples are improved by frying them, and I think they combine quite nicely with eggs.

*shudder* Even once they've gotten to the truly solid brown-black and nothing but a limp banana skin full of mush stage?? I can't imagine. I can barely stand to touch the things, much less contemplate eating them. On strong stomach days I can turn those ones into banana bread, on hyper gag reflex days they just get tossed. :P

If you can't decide, freeze them. They can then be whipped into fruit smoothies or used for cooking at your leisure. (If you're certain you want fruit smoothies, cutting them and freezing the individual slices is easier on your blender; just toss them in like ice cubes.)

Banana pancakes! My college roommate used to make these all the time. Just add to pancake batter (use less of any other liquid you might have added). Add same spices as you would for banana bread. NOM. You may have to use a blender.
